To Infinity

 

Jim started his whisky career 45 years ago as an apprentice cooper before becoming a distiller. There is not much about casks and whisky that he doesn't know.


Infinity 3 is an unusual cask/spirit combination that shows off this skill and understanding.


Quercus Alba better known as American oak, is inextricably linked with Bourbon production. And Bourbon casks are the mainstay of the Scotch whisky industry.  But unusually, in this case, the American oak is entirely Spanish. It is only Spanish Quercus Alba, mainly refill Sherry and Ribero (tempranillo) casks, that were used for this multi-vintage Bruichladdich single malt. The whisky was selected by Jim from several ages, varying styles and peat levels.


The aim of this cuvée, as with the previous two Infinity bottlings from 2005 and 2007, is a multi-layered malt with a provocatively long finish: in essence an ideal digestif dram.


He has done rather a good job.
